Do i need to adjust when i receive it or is it already set just plug it in?

Plug it in and secure it to the refrigerator, Then connect the power to the refrigerator. Nothing on it to adjust.

Does this timer work for GE Monogram fridge?

it may work but it's better to replace with original part # due to defrost times 6 or 10 or 12 hours. The defrost time of part number you selected is about 6 hours it may overloaded and damage defrost heater. This parts are not expensive $15-$30.

The timer settings is 6hrs on what the defrost time?

I think it runs regular for 6 hour cycle then defrost for about 30 minutes give or take 15 minutes.
