An elegant wine with aromas of dark cherry, white pepper and spice. Medium bodied with the usual sandy tannin structure combined with luscious red berry fruit of strawberries and raspberries. A fantastic food wine given the grainy tannin structure and length but also a gem when drunk on its own. Sandy soils provide lifted aromatics while darker soils including `Terra Rossa` types contribute to rich, bold tannins. All the vineyards are managed to produce the highest quality possible with only the best parcels selected for Willunga 100. McLaren Vale has a warm Mediterranean climate with a strong cooling influence from the Gulf of Saint Vincent. McLaren Vale experienced an unusually cool and wet 2011 vintage, with above average rainfall in February and March. Early in the growing season downy mildew was a big threat, then later botrytis. Keeping these two menaces at bay took up a great deal of time and energy and careful selection resulted in small yields of good quality fruit. The long and cool ripening season in both regions gave grapes vibrant aromatics without any loss of crisp . As with many other parts of Australia, quality in 2011 was not achieved without hard work. A combination of open fermenters and stainless steel pump-over tanks were used. Warm to hot fermentation temperatures, combined with regular pumping over and plunging ensured optimum extraction, whilst maintaining the delicate aromatics of the Grenache grapes. Timely pressing, only using the best press fractions ensured good quality of flavour and the favourable drying, sandy tannin structure. The wine was matured in older French oak to add complexity and mid palate richness, but not to dominate the varietal characters. The wine is bottled under screwcap to maintain freshness and ensure longevity.
