Can these use for bath bombs?

They are plastic and do not break down, so I would not recommend

Are these waterproof?

I'm not sure what would happen to them if they were in water for a long time, but I think they would be fine. Maybe you could seal them with polyurethane or clear nail polish before?

Are these good for faux gingerbread house?

Yes. I used them on hot coco ornaments.
